The recipes I have posted are, for the most part, handwritten by the people who gave them to me. I love to use these copies because they bring back so many memories of family and friends. This recipe came from my Aunt Jane who passed away many tears ago. Because it uses a cake mix I’m sure she found it on the side of a box. With only a few added ingredients this recipe makes a quick and easy cake with creamy pumpkin filling and crunchy streusel topping that is perfect for any fall get together!

To start, measure out and set aside 1 cup of the cake mix and set aside. Combine the remaining mix, 1/2 cup of butter and 1 egg and stir until a dough forms. Press into a greased 11 x 13 baking dish.

Add the pumpkin, 1/2 cinnamon, 3 eggs, 2/3 cup milk and 1/2 cup brown sugar to a large bowl and mix until well combined. Pour the pumpkin mixture over the crust.

Add the reserved cake mix, 1/2 cup sugar, and 1/4 cup butter and 2/3 cup chopped nuts to a bowl and mix until crumbly (if using margarine or butter at room temperature the streusel may be semi-doughy instead of crumbly). Crumble topping evenly over cake.

Bake at 350 degrees for 50-60 minutes or until streusel is golden brown. Allow to cool before cutting.

Pumpkin Cake

Creamy pumpkin filling and streusel topping on a cake mix crust make a perfect dessert for any fall get together!

Ingredients
  

Crust

  • 1 yellow cake mix reserve 1 cup for topping
  • 1/2 cup melted butter or margarine
  • 1 egg

Filling

  • 29 ounce canned pumpkin
  • 1/2 tsp cinnamon
  • 3 eggs
  • 2/3 cup milk
  • 1/2 cup brown sugar

Topping

  • 1 cup reserved cake mix
  • 2/3 cup chopped nuts
  • 1/2 cup sugar
  • 1/4 cup butter or margarine

Instructions
 

Crust

  • Mix cake mix, egg and 1/2 cup butter. Press into a greased 13x9 inch baking cake pan.

Filling

  • Add pumpkin, 1/2 tsp. cinnamon, 3 eggs, 2/3 cup milk, and 1/2 cup brown sugar to a large bowl and use a spoon mix well. Pour evenly over crust.

Topping

  • Add reserved cake mix, 2/3 cup chopped nuts, 1/2 cup sugar and 1/4 cup melted butter to a medium bowl and mix until blended. Crumble evenly over the top of the filling by hand.
  • Bake at 350 degrees for 50-60 minutes or until streusel is golden brown. Allow to cool before cutting.
