This was one of my mom’s go to recipes for any church picnic or potluck. Quick and easy to make, light and delicious, she almost always came home with an empty pie plate.

First, add 1 cup boiling water to the gelatin and mix well. Set aside to cool but not long enough let it set up.

Then, mix the cream cheese, vanilla extract and sugar smooth.

When the gelatin has cooled, whip the evaporated milk til slightly frothy. Add the gelatin and cream cheese mixture and beat until well mixed. Pour into crust and chill overnight or at least 4 hours before serving.

Easy Lemon Cheesecake

An easy to make, light and lemony cheesecake, perfect for summer cookouts. My mom made this many times to take to church functions and always came home with an empty pie plate.

Ingredients
  

  • 3 oz. box lemon flavor gelatin
  • 1 cup hot water
  • 8 oz. cream cheese
  • 1 cup sugar
  • 1 tsp. vanilla
  • 5 oz. can evaporated milk chilled
  • 9 inch graham cracker crust

Instructions
 

  • Filling: Mix gelatin and hot water, allow to cool but not set. Cream sugar, vanilla and cream cheese. Whip milk, add gelatin and cream cheese mixture. Pour into graham cracker crust. Chill 12 hours before serving
