Hot Italian sausage and crushed red pepper give these sandwiches lots of flavor with a kick. Ratchet up the heat by adding more crushed red pepper.
When I was a kid my Uncle Milton took us to the Springdale Volunteer Fire Department 4th of July Carnival almost every year. My mom got this recipe from one of the food vendors there. Make sure to grill the buns with lots of butter, it makes all the difference!

1 1/4- 1 1/2 lbs. spicy Italian sausage (about 6 sausages)
olive oil
1 green pepper cut into strips
1 medium onion cut into strips 2 14.5 ounce cans stewed tomatoes
oregano
minced garlic
red pepper flakes
8″ hoagie rolls
butter
First, brown the sausage in oil, remove from pan and set aside.
Next, add the peppers and onions and 1 Tbsp. butter. Saute for 4-5 minutes. Make sure to scrape the brown bits from the bottom of the pan so they don’t burn. Brown bits create tons of flavor!
When the onions are almost translucent add the stewed tomatoes, garlic, oregano and red pepper. Use caution with the pepper, a little goes a long way. If you like more heat add 1/4 tsp. at a time, allowing the flavor to work in before taste testing.
Return the sausages to the pot and allow to simmer for 20-30 minutes, til the liquid is reduced, or you just can’t wait anymore!
Butter the hoagie rolls and grill til golden brown. Add a sausage, some tomatoes and peppers and top with a little shredded provolone. Enjoy!
Spicy Poor Boys
Ingredients
- 1 1/2 lbs. hot Italian sausage (about 6)
- 1 Tbsp olive oil
- 1 Tbsp butter
- 1 medium onion cut into strips
- 1 large green pepper cut into strips
- 2 14.5 oz. cans stewed tomatoes
- 1 Tbsp dried oregano
- 1/2 Tbsp minced garlic
- 1/4 tsp crushed red pepper
- 6 inch hoagie rolls
- 1 cup shredded provolone or mozzarella
Instructions
- Brown sausage in oil. Remove from pan, set aside.
- Add peppers, onions and 1 Tbsp. butter to pan. Saute until onions are nearly translucent.
- Add tomatoes, oregano, garlic, red pepper. Simmer until liquid is reduced by half. Add salt and pepper to taste.
- Butter hoagie rolls and grill until golden brown.
- Assemble sandwiches and top with shredded provolone or mozzarella. Enjoy!
