I got this recipe from my friend Joyce. She would make this casserole as the main dish for her annual Christmas Eve dinner party with her family. I’ve made some tweaks to it over the years and it is now one of my family’s favorites.
The bacon, cumin and chipotle pepper give it a Tex-Mex flavor with a little kick! This recipe makes a ton so it is perfect for large get-togethers or if you want to have leftovers for packing lunches. I will often divide the ingredients into two 9 inch pans and freeze one to use later. It freezes beautifully and is easily reheated at 350 degrees for 1 hour. Serve this with Texas Toast and a tossed salad for a flavorful and filling dinner that has everyone asking for seconds!
First, cook the spaghetti according to package directions, drain and set aside.
While the spaghetti is cooking, put the hamburger, chopped bacon and onion in a 5 quart Dutch oven or stock pot and cook over medium heat until the meat is browned. Drain and return to pot.
Add the diced green pepper, mushrooms, tomato sauce and seasonings. Allow to simmer for 10 minutes.
Then, add the spaghetti and mix well.
Add a layer of the spaghetti mixture to the into a greased 11 x 14 lasagna pan. Follow with a layer of shredded colby-jack cheese. Add another layer of the spaghetti mixture cover with aluminum foil and bake at 350 degrees for 20 minutes.
Remove the foil and add the remaining cheese. Return to oven, uncovered, for about 10 minutes or until the cheese is melted. Enjoy!
Smokehouse Spaghetti
Ingredients
- 1 lb. spaghetti
- 1 lb. hamburger
- 12 strips bacon raw
- 1 med onion diced
- 1 med green pepper diced
- 14 oz. can mushrooms pieces and stems undrained
- 29 oz. tomato sauce
- 1 Tbsp minced garlic
- 1 Tbsp chili powder
- 1 Tbsp ground cumin
- 1/4 tsp chipotle pepper
- 1/4 tsp paprika
- salt and pepper
- 1 1/2 lb. colby jack cheese shredded
Instructions
- Cook spaghetti according to package directions. Drain and set aside.
- Place hamburger, chopped bacon and onion in a 5 quart Dutch oven and cook on medium heat until meat is brown. Drain.
- Return to pot and add green pepper, mushrooms, tomato sauce and spices. Simmer for 10 minutes.
- Add spaghetti and mix well.
- Layer half the meat and spaghetti mixture into a greased 11 x 14 lasagna pan. Cover with half the cheese. Layer the remaining meat and spaghetti over the cheese. Cover with aluminum foil and bake at 350 degrees for 20 minutes.
- Remove from oven and cover with remaining cheese. Return to oven and bake, uncovered until cheese is melted.
