This delicious one pot meal is quick, easy and perfect for busy weeknights! I make this often because it makes a lot so there are plenty of leftovers to pack for lunches.

8 ounces egg noodles
2-12 ounce packages smoked sausage
24 ounces chicken broth
1 medium onion, diced
1/2 cup frozen peas
8 ounces cream cheese
1/4 tsp crushed red pepper
1 heaping tsp minced garlic
1/2 tsp salt
1/8 tsp black pepper
First, cook the noodles according to package directions, drain and set aside. I use plain old wide egg noodles but it doesn’t really matter for this recipe, you can use whatever kind you like.
Then saute the sausage with the onions til the sausage is nicely browned and the onions are translucent.
Then pour in the chicken broth, add the cabbage, crushed red pepper, garlic, salt and pepper and allow to simmer until cabbage is tender. I did not get a picture of this because, apparently, I was not paying attention.
Add the peas and cream cheese and continue to simmer until the cheese is almost melted.
Stir in the noodles and let simmer til heated through. Add more broth or less cream cheese if you prefer a thinner sauce. Enjoy!
Sausage and Noodles
Ingredients
- 8 ounces egg noodles
- 1 Tbsp vegetable oil
- 24 ounces smoked sausage cut into 1″ slices
- 1 medium onion diced
- 24 ounces chicken broth
- 1/2 medium cabbage chopped
- 1/2 Tbsp minced garlic
- 1/4 tsp crushed red pepper
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 cup frozen peas
- 8 ounces cream cheese cut into 1″ cubes
Instructions
- Cook the noodles according to package directions, drain and set aside.
- Place the sausage and onion into a large (5.5 qt.) Dutch oven and saute until sausage is browned and onion is translucent.
- Add the chicken broth, cabbage, crushed red pepper, garlic, salt and pepper and simmer until cabbage is tender.
- Add peas and cream cheese and simmer until the cream cheese is almost melted.
- Stir in the noodles and allow to heat through. Add more salt and pepper if desired.
- Add more broth or less cream cheese if sauce a thinner sauce is preferred.
- Enjoy!
